A cooking class booked as a filler activity produces a pleasant morning; the same three hours designed properly produces the thing clients describe first when they get home. The difference is whether the programme starts at the market or starts at the stove.

What Separates a Good Class From a Filler

The classes worth selling begin with a market walk — a guide explaining galangal against ginger, palm sugar, the shrimp paste that makes sambal work — and continue into a home or a proper teaching kitchen where clients grind spice paste by hand rather than being handed a pre-measured tray. Warung and night-market eating is where the best food is, and the way to sell it confidently is a guided food walk: a local guide who knows which stalls turn over fast, orders in Indonesian, and manages the heat level. Clients get the experience without the gamble. Brief them on bottled water and let them opt out of raw sambal, and the risk profile is unremarkable.

Private Dining as the Upsell

At the top end: a rice-terrace dinner with a private chef, a seafood grill on a beach the client has to themselves, a degustation built around one region's cooking. These carry real margin and they are the natural anniversary or last-night component in a FIT programme.
